Walnut coffee cake
1/4 cup vegetable oil
1/2 tsp vanilla
1 tbsp Seven Blendz Original Coffee
2 tbsp water
1/2 cup yogurt
1/4 tsp baking soda
1 cup flour
1/2 tsp baking powder
1/4 tsp salt
1 tbsp cocoa powder
1 tsp cornflour
1/2 cup chopped walnuts
-Preheat oven to 180°c for 10 mins.
-Mix together yogurt and baking soda. Set aside for 5 mins.
-Whisk together sugar, oil, vanilla, coffee mix, and yogurt mixture. Sift in flour, baking powder, salt, cocoa powder, and cornflour. Mix well. Fold in the chopped walnuts.
-Transfer to a greased 6" tin lined with parchment paper. Add more walnuts on top. Bake at 180°c for 25-30 mins.
-Unmold after 15 mins and let it cool down completely. Top it with buttercream frosting and enjoy!
